Lemon Basil Chicken..... YUM!

So Tim's big birthday is tomorrow and we had his "birthday dinner" tonight. I wanted tonight to be special and I had an entire meal + dessert planned out that was gluten-free, dairy-free and soy-free. Well, I had to completely change the menu because of the events last week. I made a list of things that he is allowed to eat and went with that. Here is what we had:

Lemon Basil Chicken
Marinated Asparagus
"Scalloped" Potatoes
Salad

I was pretty proud of myself! I wanted to share what I did to make the chicken because I did it without any recipes! I made a marinade from scratch and kept mixing ingredients until it tasted the way I wanted it to. The ingredients were:

1 cup of olive oil
1/2 cup of lemon juice
1 tsp lemon zest
2 tsp salt
1 clove of garlic, finely chopped
fresh basil, finely chopped

I literally just mixed that all together until it tasted yummy. I let the chicken marinate in that for almost a day. I had frozen chicken breasts and I just let them thaw in the marinade overnight.... Then I put them in a baking dish, chopped up a little more garlic, put a slice of lemon on top of each piece of chicken and then cooked them for 35 minutes at 375 degrees.

It was absolutely delicious. Especially to me because I LOVE chicken with anything lemon on it.

Oh and the asparagus.... I used the same marinade on it! And it was sooooo yummy too.

And the potatoes.... they we basically just sliced thin, cooked with onions and salt. I just wanted to play a little trick by calling them scalloped!

So phew, at least I know it is possible to make meals that we can both eat and enjoy together. I will try to work on taking pictures.... I have some fun things coming up.... like our new version of breakfast for dinner!
