SO this past week changed our lives..... Tim ended up getting really sick, going to the doctor and getting a ton of tests done. Thankfully his blood tests all came back normal. And now it appears that he doesn't have Celiac Disease. Now he has something worse called Allergic Colitis.... basically still the same thing as Celiac's but now he cannot eat anything with corn or rice.
No gluten (wheat, barley, rye), soy, dairy, egg, rice, corn and sugar.
Oh. my. word.
And not only can't he eat it but I can no longer cook anything with dairy, eggs, rice, corn or sugar. So what the heck are we eating?????? A lot of meat, raw fruit and vegetables and......... this shouldn't be forever... I will at least be able to cook with those things again but it may be somewhat long term for him.

I am back to nothing. BUT the good thing is that since he found all this out and has completely cut those things out, he is feeling so much better and even looks healthier!!!! Some things we have found that we will be able to cook and eat are buckwheat, quinoa, agave nectar, tapioca flour, egg replacement and several other things that I cannot spell or pronounce. So I will have to do some major research to find recipes that have these ingredients in them. Quite tricky.
I'm just sad because Tim's birthday is Tuesday and I was going to make him a birthday dessert (he hasn't had a single dessert in over a year). The thing I was going to try to make him had rice and corn flour in it so scratch that!!!!!!!!

The dinner was delicious and I understand the challenges. With my food allergies, a vegetarian, and everyone's likes and dislikes I find it hard to fix meals when we all get together. I am hoping that the allergy shots will help him. Let me know when you find good recipes and I will share mine as well.
